The Best Coconut Pancakes With Raspberry Compote

With summer winding down, this is the best time to celebrate one last hurrah for the gorgeous fruits of the season. Inspired by our Eminence Organics Coconut Milk Cleanser and the Raspberry Pore Refining Masque, we combined two key ingredients into one delicious summer brunch. Enjoy our latest Eminence Organics seasonal recipe and whip up summery coconut pancakes with a simple raspberry compote: 

Organic Coconut Pancake Recipe With Raspberry Compote

Serves 3-4

Coconut Pancake Ingredients

  • 1 cup organic whole white wheat flour
  • 2 tablespoons organic sugar, preferably cane sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 free-range egg
  • 1 cup organic milk
  • 2 tablespoons oil
  • 1 teaspoon vanilla
  • ¼ cup shredded, sweetened coconut (organic, if possible)

Raspberry Compote Ingredients

  • 2 cups organic raspberries (frozen or fresh but preferably)
  • 3 tablespoons organic maple syrup
  • 1 tablespoon organic lemon juice
  • 2 tablespoons water

In a large bowl, mix flour, sugar and baking powder. In a separate bowl, beat egg with milk, oil and vanilla. Pour egg mixture into dry ingredients and mix until just moistened. Sprinkle and fold in coconut shreds. Do not overmix!

Heat a lightly oiled frying pan over medium heat (we used a mini pancake griddle for mini pancakes). Pour batter onto pan to form pancakes and cook until light brown on both sides.

To make the raspberry compote, combine all ingredients in a saucepan over medium heat. Simmer for 8-10 minutes and stir occasionally until slightly thickened and sauce is formed.

Serve pancakes hot and drizzle compote over top for a luscious and fruity brunch dish.
